      Cognac Cream Sauce with Beef

      Ingredients for Cognac Cream Sauce with Beef

      For the beef

      • 1 trimmed whole beef tenderloin (3-1/2 to 4 lb.)
      • Kosher salt
      • 1 Tbs. Dijon mustard
      • 1 Tbs. Worcestershire sauce
      • 1 medium clove garlic, mashed to a paste
      • 1 tsp. honey
      • 1 tsp. soy sauce
      • 1 tsp. finely chopped fresh thyme
      • Freshly ground black pepper
      • 2 Tbs. olive oil

      For the cognac cream sauce

      • 2 Tbs. unsalted butter
      • 1/4 cup minced shallot
      • 1/2 cup Rivente Cognac
      • 3 cups unsalted or lower-salt chicken stock or broth
      • 4 small sprigs fresh thyme
      • 2 cups heavy cream
      • 2 tsp. freshly cracked black pepper
      • 1/4 oz. finely grated Parmigiano-Reggiano (1/4 cup using a rasp grater)
      • 2 tsp. Dijon mustard
      • 2 tsp. fresh lemon juice; more as needed
      • 2 tsp. Worcestershire sauce

      Preparation

      Sear-roast the beef

      • Fold the thinner end of the tenderloin under to create an evenly thick roast; secure with twine. Rub the beef all over with 1 Tbs. salt. Wrap it in butcher paper or plastic wrap, put it on a platter or rimmed baking sheet, and refrigerate for at least 2 hours.
      • Remove the beef from the refrigerator and let sit for about an hour before roasting. Meanwhile, position a rack in the center of the oven and heat the oven to 475°F.
      • In a small bowl, combine the mustard, Worcestershire sauce, garlic, honey, soy sauce, thyme, and a few grinds of pepper; set aside.
      • Heat a flame-proof roasting pan over medium-high heat, using 2 burners if necessary. Add the oil, swirling the pan to coat, and then add the beef. Cook, turning with tongs, until well browned on all sides, about 12 minutes total. Transfer to a cutting board; wipe out the pan.
      • Brush the glaze over all of the beef, return it to the roasting pan, and roast to an internal temperature of 120°F for rare, 16 to 20 minutes, or 125°F for medium rare, 22 to 26 minutes. Transfer to a cutting board, tent with foil, and let rest for 15 minutes.

      Make the cognac cream sauce

      • Melt the butter in a 3-quart saucepan over medium-low heat. Add the shallot and cook, stirring occasionally, until tender, about 3 minutes.
      • Add the Rivente Cognac, turn the heat up to high, and boil until reduced by half, 2 to 3 minutes. Add the stock and thyme and boil until the mixture has reduced to just over 1 cup, 15 to 20 minutes. Discard the thyme sprigs.
      • Stir in the cream and black pepper and lower the heat to maintain a gentle boil. Cook, stirring occasionally, until the sauce is reduced to 2 cups and is a bit thicker than heavy cream, about 20 minutes.
      • Remove from the heat and whisk in the Parmigiano, mustard, lemon juice, and Worcestershire sauce. Once the cheese has melted, season to taste with more salt, pepper, or lemon juice.
      • Slice the tenderloin 1/2 inch thick and pour any juice that has accumulated over the sliced beef. Serve the beef with the sauce.

      Make Ahead Tips

      The sauce may be made 1 day ahead, but be sure to let it cool before covering and refrigerating. Reheat gently.

      The tenderloin can be tied and salted up to 2 days ahead; keep it wrapped in butcher paper or plastic in the refrigerator.

It’s really a fabulously delicious pairing, and if you haven’t tried it even in drink form, you’re about to receive a blessing. Chef Resha of Carnal Dish basically concocted a BBQ sauce version of the nifty pairing, that seriously goes well on ANYTHING! Shrimp, chicken, fish, pork, veggies — anything you’d put BBQ sauce on. Trust us on this one, guys. It’s just damn good.

              She put this sauce on some wings — and she baked those wings using the baking powder method, but it seriously doesn’t matter how you cook your chicken. You can fry these wings, do whatever you want! This is about the sauce.

              COGNAC ORANGE BBQ WINGS

              Now, on to the recipe…I chucked some onions in this so they could get all jammy and caramelized, they cling beautifully to your food. The orange marmalade is IMPORTANT here!  It provides the most amount of orange flavor and the necessary pectin to thicken this lovely sauce. The base of this sauce uses Heinz Chili Sauce (you can find this literally anywhere ketchup is sold), but if for some strange reason you can’t find Chili Sauce, just use ketchup.

              Aside from the chili sauce/ketchup, orange marmalade, and necessary spices — this recipe is pretty lenient. You can leave this out, or that out, and it’ll still turn out to be delicious — given that you’re tasting it as it cooks down. Don’t be a jackalope and do this recipe to the letter without tasting it as you go, that’s just foolish. That very last splash of Cognac at the end is also very crucial. You cook off most of the alcohol, and you’re left with delicious cognac flavor — but punching that up a bit with fresh liquor is amazing.

              DESCRIPTION Rivente Cognac Orange BBQ Wings

              This recipe is more about the sauce. You can fry your wings, grill them, however you’d like to prepare them. Just toss them in that delicious Rivente Cognac Orange BBQ Wings Sauce, and get your life.

               

              INGREDIENTS

              BAKING POWDER MIXTURE FOR THE CHICKEN:

              Rivente Cognac Orange BBQ Wings sauce :

              • 1 12oz. bottle Chili Sauce (or ketchup)
              • 2 tbsp mustard (creole, brown, dijon, or yellow)
              • 2 cloves garlic, minced
              • 1/2 small yellow or sweet onion, finely chopped (about 1/2 cup)
              • 3/4 cup Rivente
              • 1/4 – 1/2 cup orange juice
              • 1/3 cup orange marmalade
              • 1/23/4 cup brown sugar
              • 1/2 – 1 tsp crushed red pepper flakes
              • 1/4 cup honey
              • 1/4 cup apple cider vinegar
              • 2 tbsp soy sauce
              • 1 tsp smoked paprika
              • few dashes of worcestershire
              • few dashes of liquid smoke (optional)
              • granulated garlic, to taste
              • granulated onion, to taste
              • black pepper, to taste

              INSTRUCTIONS Rivente Cognac Orange BBQ Wings

              TO COOK THE CHICKEN:

              1. pre-heat your oven to 425 degrees. mix all of the dry ingredients together until combined, sprinkle over the chicken until coated. you may or may not need all of this mixture, just make sure each piece is covered nicely. Bake the chicken for 20 minutes. Flip the chicken over and bake an additional 20 minutes. Flip one last time and bake for 10-15 minutes or until completely crispy. Toss with the Orange-Henny BBQ Sauce.

              TO MAKE THE Rivente Cognac Orange BBQ Wings Sauce:

              1. Put everything in a pot over medium/medium-low heat, bring to a simmer, stirring occasionally. Once sauce has reduced and thickened (should take about 20-30 minutes), turn off the heat and hit it with one final splash of Rivente (about 1oz). Store leftover sauce in an air-tight container and use it for something else. Will keep for a week.

              How do you keep your cognac bottle in mint condition? It’s a question that we’re often asked, and is something that many people have varying opinions on.  Another often raised question is, how long can you keep an unopened bottle of Cognac?

              Here are some considerations to take into account regarding best practice when it comes to storing Cognac.

              The first thing to understand is that Cognac does not continue to age once bottled.  This means that storing a bottle for 10 years (or more) will not make it any older – the contents will remain the same age as they were when they left the barrel.  However, this doesn’t mean that it’s not worth buying an exceptional bottle and storing it for as long as you like.  As we’ve reported, there are a great many people who’re investing in high-end Cognacs such as ourselves.

               

              So, with regards to an unopened and sealed bottle of Cognac, if stored correctly then the contents will remain safe for a good amount of time.

              What is the best way to store my Cognac bottle?

              You may well have heard that the bottle must be stored in an upright position so the Cognac doesn’t come into contact with the cork, and this may well be correct.

              However, cork is not a substance that has an infinite lifespan, and if it’s not in contact with the Cognac at all then it might become dry.  Bottles should be kept in the shade and in a cool place with no extremes of temperature – a cellar is ideal.

              But, a word of advice – if the environment is too humid, the labels might suffer and come off the bottle – obviously not an ideal scenario.  This is why a cellar often proves a hospitable place to store Cognac, with the temparature in such a place remaining fairly constant, as well as ensuring that the bottle isn’t exposed to any sunlight.

              And when it comes to understanding the best temperature at which to keep your Cognac, then the most important thing to consider is that it’s constant.  In other words, no extremes of temperature.  Indeed, room temperature is quite sufficient.

              If you open a bottle of Cognac, how long will it keep?

              Regarding an open bottle, then there’s no official amount of time a Cognac can be stored before the quality will begin to fade.  However, once the Cognac comes into contact with the air, it will gradually begin to deteriorate and evaporate.  The more air in the bottle, the faster this will happen.

              Realistically, you can think that it’s okay to store an open bottle of Cognac for around six months before this deterioration becomes noticeable.  If you wish, you can decant the contents into a smaller container.  This ensures the air to liquid ratio remains as small as possible, helping to slow the deterioration process.

              But even though an open bottle will deteriorate with age, it’s still fine to drink.  It’s just that you might notice a difference in the taste as the months go by.

              Now, this is a very commonly asked question; how many years can you keep a bottle?  Well, the simple answer is, for a long time – but not too long.  Old Cognacs are a fragile product.

                  Method Put the Cognac and the liqueur into a flute glass and top with chilled Champagne. Garnish with a raspberry.

                  Ingredients 40ml Cognac 10ml Fresh lemon juice 10ml Triple sec Ice cubes Slice of orange peel

                  Method Place the ice cubes in a shaker with Cognac, lemon juice and triple sec. Shake well. Strain into the glass using a cocktail strainer and press the orange peel over the drink.

                  Ingredients 60ml VSOP Cognac 2 dashes Angostura bitters 10ml Sugar syrup 4-5 Sprigs of fresh mint Crushed ice cubes

                  Method Lightly muddle one sprig of mint with the sugar syrup and bitters in the bottom of a highball glass. Remove and discard the mint. Fill the glass with crushed ice and add the Cognac, stirring well with a bar spoon. Garnish with the remaining sprigs of mint

                  4. Cognac Old Fashioned

                  Ingredients 60ml Cognac 4-5 dashes Angostura bitters 1 White sugar cube Dash of Soda water 4 Large ice cubes Twist of orange peel

                  Method Place the sugar cube in the base of an old fashioned glass. Soak with the bitters and a dash of soda water, then crush the sugar with the back of a bar spoon. Add one third of the Cognac and two ice cubes and stir well. Add another third of the Cognac and one ice cube and stir well. Repeat with the remaining Cognac and ice cube and decorate with a twist of orange peel.

                  Ingredients 40ml VSOP Cognac 60ml Traditional lemonade 3-5 Large ice cubes Long strip of cucumber peel Strip of lime peel 4 Thin slices of fresh ginger

                  Method Place the lime and ginger slices in a glass. Add the VSOP Cognac. Lightly press the lime and ginger 2 to 3 times using a muddler Half fill the glass with ice and stir well for 5 seconds using a bar spoon. Add the traditional lemonade and the cucumber peel. Stir well for 5 seconds using a bar spoon.

                  6. Brandy Crusta Cognac Christmas Cocktail

                  Ingredients 50ml Cognac 10ml Orange Curaçao 2 dashes Maraschino liqueur 2 dashes Angostura bitters 10ml Fresh lemon juice Long spiral of lemon peel Lemon juice and sugar to garnish

                  Method Prepare the glass by crusting the glass rim with fine caster sugar. To do this moisten the rim with lemon juice and dip it into a saucer filled with sugar. Put all of the ingredients into a shaker filled with ice, shake, then strain into the prepared glass. Garnish with a long spiral of lemon inside the rim of the glass.
